Genetically our bodies are virtually the same as they were at the end of paleolithic some 20,000 years ago. The appearance of agriculture and domestication of animals some 10,000 years ago and the Industrial Revolution some 200 years ago introduced new dietary pressures for which no adaptation has been possible in such a short time span.
