Paleo challenge day 7 recap
- Breakfast: eggs, brussels sprouts
- Lunch: everyday paleo’s apple muffins, bok choy, sweet potato, grapes, some uneaten leftover baby lunch (chicken soup, zucchini & broccoli, carrots)
- Dinner: spaghetti squash and turkey meat sauce
Week one is in the books. Pecked all day today and didn’t have a proper sit down meal until dinner. The muffins were my most successful attempt at paleo baking, but they’re still a far cry from GOOD. What they really need is a big pat of butter. Too bad.
