Paleo Check-In, Day 20
- Breakfast: 3 eggs cooked in coconut oil, .25lb turkey breast, avocado
- Snack: nut mixture
- Lunch: Roasted turkey, broccoli, and carrots, Larabar
- Snack: nut mixture
- Dinner: Sirloin steak, salad, and creamed spinach*, pineapple
- Dessert: Homemade banana whip
The banana whip was a great ice cream-like dessert and the only ingredient is bananas! I froze 2 of em, chopped em up, nuked em for 10 seconds, then dumped them into my kitchenaid mixer for about 3 min. It whipped up light and fluffy and tasted very much like ice cream. I couldn’t help but think that the only thing that would make it better was a bit of chocolate.
* Damn, I didn’t realize that “creamed spinach” meant it had CREAM in it. That there’s dairy. Guess I won’t be eating the leftovers.
